To Bloom the Threads
Steep 8 to 12 threads in 30ml of warm water or milk (never boiling) for 15 to 20 minutes. The liquid will turn a deep gold. Use the infusion, not the threads, for the strongest colour.
Storage
Keep the lid sealed, in a cool dark cupboard. Saffron strengthens for the first six months and stays good for three years.
How Much?
A pinch is genuinely a pinch. More is not better; over-dosing brings out bitterness.

Ingredients: 100% pure saffron (Crocus sativus stigmas). No additives, no colouring, no preservatives. Packed in a facility that also handles tree nuts (pistachio).

The Ritual
The traditional cut. Soften it gently.
The Grace cut contains a touch of the natural style at the base of the stigma. This softens the aroma; it is the saffron of unhurried Sunday cooking.
Place ten to fifteen threads in a mortar with a pinch of salt. Grind lightly for ten seconds, no more. The salt helps draw the colour out without bruising the threads.
Bloom in two tablespoons of warm water for twenty minutes. Use the liquid for paella, biryani, or a slow lamb braise.
