To Bloom the Threads

Steep 8 to 12 threads in 30ml of warm water or milk (never boiling) for 15 to 20 minutes. The liquid will turn a deep gold. Use the infusion, not the threads, for the strongest colour.

Storage

Keep the lid sealed, in a cool dark cupboard. Saffron strengthens for the first six months and stays good for three years.

A pinch is genuinely a pinch. More is not better; over-dosing brings out bitterness.

Ingredients: 100% pure saffron (Crocus sativus stigmas). No additives, no colouring, no preservatives. Packed in a facility that also handles tree nuts (pistachio).

The Ritual

A pinch is exactly a pinch.

Eight threads is enough for a pot of pilaf for four. Twelve is the right number for a celebration rice dish. Do not over-dose; the threads turn bitter past a point.

Steep in warm (not boiling) water or milk for fifteen minutes. Pour the liquid through, not the threads.

Keep the rest of the pack sealed, in a dark cupboard. Saffron strengthens for six months and holds well for three years.
