Affogato is one of Italy’s simplest yet most elegant desserts: a scoop of ice cream “drowned” in hot espresso. This version takes the classic idea and transforms it into a luxurious global dessert by introducing saffron, pistachio and warm aromatic notes. Before You Begin: Prepare the Saffron Correctly

For this dessert, the saffron must be bloomed gently for maximum colour and aroma.

This concentrated saffron liquid will be used to flavour the ice cream base.

Ingredients

Serves 2

Saffron concentrate prepared according to your saffron guide
Two scoops vanilla gelato or high quality ice cream
One tablespoon crushed pistachios
One freshly brewed espresso shot (optional decaf)
Half teaspoon honey optional
Pinch of cardamom optional
Fresh mint for garnish optional

How to Make Saffron Pistachio Affogato

Scoop the vanilla gelato into two chilled dessert bowls or glasses.
Drizzle half a teaspoon of honey over each scoop if you prefer additional sweetness.

Pour one to two teaspoons of the prepared saffron concentrate over the ice cream. The saffron will gently melt into the gelato and create golden streaks of colour.

Prepare a fresh shot of espresso and allow it to cool slightly for thirty seconds so it does not shock the gelato too quickly.

Pour the warm espresso over the saffron infused gelato. The flavours of coffee, saffron and cream will blend instantly into a silky, aromatic sauce.

Sprinkle the crushed pistachios on top. Add a pinch of cardamom or mint if you prefer a more aromatic finish.

Serve immediately while the textures are still contrasting between hot and cold.

Variations

Use rose or orange blossom water for a Middle Eastern twist.
Replace espresso with strong black tea for a caffeine lighter version.
Serve with biscotti or pistachio shortbread on the side.

Serving Suggestions
